The European Food Safety Authority (EFSA), on 18 February 2011, published an evaluation of factors associated with Salmonella contamination of chicken carcasses. The report, based on data from an EU-wide baseline survey, shows that the risk for contamination depends on slaughter processes and varies across countries and slaughterhouses.
